Purple puer is normally processed and fermented in the same way as sheng puer. The speciality of this puer type is that the leaves for this tea are collected from old trees, which were fully integrated into the local ecosystem and have mutated. As the tea tree mutated naturally, the tea leaves acquired an unusual color, they turned into purplish. This effect is caused by anthocyanin pigments, they are a natural dye which also can be found in blueberries, blackberries and violets. Leaves with purple color are also valued for containing high levels of flavonoids. Anthocyanins and flavonoids provide powerful antioxidant features. Purple puer is quite rare and thus valuable.
